Toss potatoes in small baking dish with just enough olive oil to coat, and lightly sprinkle with salt and pepper. Cover and roast until tender, 35-40 minutes. Set aside to cool. Cut into halves, or quarters, the slide them onto skewers for grilling, if needed. Slice onion into 1/2 inch rings. Cut pepper in half. Add garlic to a little olive oil and brush over veggies. Then grill.
